Guru Event: Flower Fondant with Fair Cake

Cupcakes rank in my all-time top five sugar-coated treats guaranteed to prompt a glazed smile and saporific sense of contentment. With this in mind, I decided to organise a Guru event with a flowery twist to bring in the New Year to offset January’s detoxification.
Fair Cake are a small company making “tiny bits of heaven that just happen to look like cupcakes.” They use a whole host of top end ingredients including free range eggs and Fairtrade chocolate and coffee. The class itself was held at a decadently swish open plan kitchen in Greenwich hosted by our flamboyant, effervescent hostess Shikhita Singh who began the session with a ambient mix of the Sopranos to get us enthused. She also recommends Primrose Hill Bakery and Lola’s at Selfridges as cupcake hotspots, so if you’re local get involved!

We were given a brief introduction to edible flower making, before getting stuck into imprinting a multitude of shapes into our coloured gumpaste. As you can see, shapes and colours were versatile, all beautifully housed in acoustic foam which can be bought easily online, and hold each ornate decoration rather snugly. The glittery balls got a titter of laughter, as I recalled similar sparkling adventures with make-up as an indie teen!

From there, it was time for an exposé on just how to make the right mix of buttercream, beating out the air bubbles repeatedly with a wooden spoon.

Coloured buttercream was divided up between us, as we attempted to perfect pretty swirls on pre-made cupcakes that tasted heavenly, certainly better than my office canteen I am afraid to say! The silicon-based rose flower tool was my personal favourite, alongside the grass-making piping accessory, which made a quaint picket-wood green garden decoration atop of the cake.

It was a great opportunity to get truly inventive while piping, with the chance to devour our creations if we were not satisfied! To complete the event, we were all presented with bespoke blue and pink gift boxes to house our swirly, whirled pieces of goodness, safe in the knowledge we’d be inundated by eager faces keen to sample our evening’s work!
